Street Corn Chicken Burger Bowls

I love street corn which is also known as Mexican Street Corn and Elote Corn. Let’s be honest, I love everything that has to do with corn! Grilling season is coming up and when it is made on a grill it is AMAZING! It always reminds me of the Fair and seeing tons of corn on the cob on the big grills smothered in butter. YUM!

This meal prep is a lighter version of that without the butter but still all the delicious flavors!


Street Corn Chicken Burger Bowls

WOW am I excited to have these bowls for my lunches this week! These chicken burger patties with the combination of the street corn are DELISH!
When it is time to eat lunch at work, I will remove the lime and heat up the bowl. I will then cut up the patties and mix with the street corn then add a combo of plain yogurt and guacamole. Then I will squeeze my lime wedge all over!

Equipment

  • 1 Oven
  • 1 Large Mixing Bowl

Ingredients
  

Chicken Burger Patties

  • 7 oz 96/4% Ground Chicken
  • 1/4 tsp Ranch Seasoning (I use Dak's)
  • 1 Blended Chipotle Pepper in Adobe Sauce
  • 1-1/2 tbsp Plain Bread Crumbs

Street Corn

  • 1 cup Roasted Corn (canned or frozen)
  • 1 tbsp Chopped Red Onion
  • 2 tsp Diced Jalapeño Pepper
  • 1/2 tbsp Chopped Fresh Cilantro
  • 1/8 tbsp Diced Mini Sweet Red Peppers
  • 1/2 tsp Papa's Pepper Extreme Seasoning (any spicy/cajun type will do)

Sides

  • 1/2 Lime
  • 1 tbsp Guacamole
  • 3 tbsp 0% Plain Greek Yogurt
  • 1/8 tsp Cojita Queso

Instructions
 

  • Mix your chicken burger ingredients, roll into balls and weigh out in 3oz portions.
  • Take each ball and flatten in a non stick or sprayed fry pan to cook until 165-170, flipping to get a delicious crisp on each side
  • While your chicken burgers are cooking, mix your street corn ingredients
  • In a small bowl, mix your greek yogurt, guacamole and squeeze of lime
  • Fill your lunch dishes with the street corn, cooked chicken burgers and top with cotija cheese and a lime wedge.

    I made these yesterday and I probably put too much chipotle, as I was trying to measure for 10 dishes since me and hubby will both be eating for lunch, but they are really good. I totally forgot the lime until now. I’m going to try it!! Thank you for the recipe!
