- 1.5 lbs Chicken Breast
- 2 tbsp Lemon Pepper Seasoning (I used Mrs Dash)
- 2 cups Jasmine Rice
- 1-2/3 cup Broccoli
Lemon Pepper Butter Sauce
- 2 tbsp Light Butter (I used Light I Can't Believe It's Not Butter)
- 1/2 cup Fat Free Chicken Broth
- 3 tsp Lemon Juice
- 1-1/2 tsp Lemon Pepper Seasoning
- 1 tsp Onion Powder
Instructions
- Cut chicken into chunks and season well with your lemon pepper seasoning
- Air fry chicken at 400 degrees for 25 minutes, flipping multiple times throughout the cooking process.
- While your chicken is cooking, cook your rice.
- Rinse your broccoli. When your chicken and rice is almost done, boil or steam your broccoli. I boil and only for a quick minute!
- When your chicken is done, place in a clean mixing bowl.
- Measure out your rice into each meal prep container.
- Heat up your sauce. Boil so the butter melts and then pour over your chicken. Mix until all are coated.
