This tropical meal prep bowl packs bold flavor and vibrant color! Juicy air-fried chicken thighs are glazed with a sticky orange ginger sauce made from fresh-squeezed juice (using my favorite Amazon Storefront juicer). Served over fluffy rice with a refreshing cabbage slaw featuring sweet pineapple and juicy orange segments, it’s the perfect sweet, savory, and tangy balance. Equipment

  • 1 Air Fryer
  • 1 Rice/Pressure Cooker
  • 1 Small Sauce Pan
  • 2 Large Mixing Bowls
  • 4 Glass Meal Prep Containers

Ingredients
  

  • 1.5 lbs Chicken Thighs
  • 2 cups White Rice

Orange Ginger Glaze

  • 1 cup Fresh Squeezed Orange Juice (I used 5 oranges)
  • 1 tbsp Lite Low Sodium Soy Sauce
  • 2 tbsp Wholesome Yum Keto Honey
  • 2 tsp Ginger Paste
  • 2 tsp Seasoned Rice Wine Vinegar
  • 2 tsp Corn Starch (mix with water before adding)

Tropical Slaw

  • 2 cups Shredded Cabbage
  • 3 Cara Oranges Peeled and Diced
  • 1/2 cup Pineapple Diced (or use no-sugar tidbits)
  • 1 tbsp Fresh Squeezed Orange Juice
  • 1 tsp Seasoned Rice Wine Vinegar
  • 1/2 tsp Wholesome Yum Keto Honey
  • Salt & Pepper to taste

Instructions
 

  • Pat dry your chicken thighs then cut into bite size pieces
  • Start your rice/pressure cooker
  • Air fry your chicken at 400 degrees for 15 minutes, flipping half way through.
  • While your chicken and rice are cooking, peel and dice up your fruit.
  • To a bowl, add your cabbage, fruit and vinaigrette, mix and let sit.
  • When your chicken is cooked, put into a large mixing bowl and set aside.
  • Whisk your sauce ingredients together. Should thicken as it sits.
  • Once your rice is done, pour the sauce of your chicken and stir until all pieces are covered.
  • Assemble your bowls starting with your rice in the middle, then your slaw, and your chicken.
  • Top with diced green onions and sesame seeds. (optional) ENJOY!
