If you love a meal prep recipe that’s packed with flavor but still easy enough to make on a busy weeknight, these Crispy BBQ Peanut Chicken & Noodle Bowls are going to be a new favorite! Tender, crispy chicken is tossed in a creamy sweet-and-savory BBQ peanut sauce and paired with saucy, chewy noodles for a meal that’s seriously satisfying.
This recipe is one of those perfect combinations of flavors that you wouldn’t necessarily think to put together until you taste it. The smoky, tangy BBQ sauce pairs surprisingly well with creamy peanut butter, soy sauce and maple syrup. The result is a rich, slightly sweet, savory sauce that coats every bite of chicken and noodles.

🍗 Crispy Chicken + Creamy Peanut BBQ Sauce
The star of these bowls is definitely the chicken. Instead of simply sautéing the chicken, we’re giving it a delicious crispy coating before tossing it with the sauce. That crispy texture holds up beautifully against the creamy sauce and gives every bite a little crunch before the saucy goodness takes over.
And then there’s the sauce! My homemade BBQ sauce brings smoky, tangy flavor while creamy peanut butter adds richness. Soy sauce gives it that salty umami flavor, while a touch of maple syrup balances everything with just enough sweetness. It’s bold, creamy and completely addictive.

🍜 The Noodles Make This Meal Prep So Good
For the noodles, I love using Trader Joe’s Squiggly Noodles. Those fun little squiggles are perfect for catching all of that creamy BBQ peanut sauce, which means you get plenty of sauce in every bite.
I wanted these bowls to be extra saucy, so the chicken and noodles are both generously coated rather than having the sauce sitting on the side. When you’re meal prepping, nobody wants dry noodles! The extra sauce keeps everything flavorful and delicious when you reheat your bowl.

🥜 A Sweet, Savory & Smoky Flavor Combination
What makes this recipe stand out is the combination of flavors. You get smoky BBQ sauce, creamy peanut butter, salty soy sauce and a little sweetness from maple syrup. It’s almost like BBQ chicken meets peanut noodles — and somehow it works incredibly well.
If you’re someone who likes a little heat, add some hot sauce or red pepper flakes to the sauce. You can easily adjust the sweetness, saltiness or heat to make it exactly how you like it.

🥡 Perfect for Meal Prep
These bowls are made for meal prep! I like arranging the chicken and noodles in rows in my meal prep containers so you can see all of the delicious components at a glance. They’re easy to portion out and even easier to grab from the refrigerator when you need a quick lunch or dinner.
For the best texture, store the bowls in airtight containers and reheat them in the microwave until warmed through. If the noodles absorb some of the sauce after refrigeration, simply add a tiny splash of water before reheating and give everything a good stir.
