Air Fryer Portobello Pizzas
YUM these were so delicious! Believe it or not, I have never had portobello mushrooms before. When I saw them at Costco over the weekend, I wanted to get them and try a couple recipe ideas I have had in mind. These are full of flavor and super meaty without all the meat. These are huge and super easy! You really can make everything in the air fryer.
Equipment
- 1 Air Fryer
Ingredients
- 2 Portobello Mushrooms (large)
- 4 tbsp Pizza Sauce
- 1/2 cup Lite Shredded Mozzarella (I love Trader Joes)
- 8 slices Hormel Turkey Pepperoni
- 4 tbsp Black Olive Slices
- 1 tsp Dak's Green Zest or any Pizza/Italian Seasoning
Instructions
- Preheat Air Fryer to 375
- Spoon out the insides of the mushrooms. You can break the stem off and glide your spoon along the inside of the caps to remove the black part.
- Spray both entire mushrooms with avocado spray or rub EVOO
- Season the inside of the mushroom caps
- Set mushrooms in your air fryer stem side down and cook for 2 minutes
- Flip mushrooms so the inside is facing up and divide sauce into each
- Add your cheese (leaving just a little aside) and half of your olives
- Cook for another 2 minutes
- Add pepperoni, rest of olives and top with remaining cheese so the pepperoni doesn't fly off during cooking
- Air fry for another 8 minutes
- Top with dried oregano, basil or any of your choosing
