Bacon Cheeseburger Omelette
I love bacon cheeseburgers. Of course I prefer them on a brioche bun but it’s fun to turn them into crunchwraps, salads, bowls and even omelettes!
I wanted to go crazy and make something out of the norm. Yes, this is normal for me but work with me here. Today is National Egg Day so I thought what the heck? Let’s kick off the beautiful weekend with a delicious and out of your mind omelette. So here we are. Trust me friends, this bacon cheeseburger omelette is so delicious that you will want to make it over and over!



Bacon Cheeseburger Omelette
It's National Egg Day and I felt like going a bit crazy with my breakfast this morning. Ignoring my failed ketchup squeeze attempt, this was incredible!The entire plate is only 8 ww points and I ate the whole thing. You can use dill pickles for this and save 2 points but I am obsessed with Wickles Pickles and I'm willing to use those extra points on them.Trust me, this may sound weird but it is DELISH!
Equipment
- 2 Fry Pans
Ingredients
- 4 Eggs
- 3 oz 96/4% Ground Beef
- 1 tbsp Bacon Pieces/Bits (I love Kirkland brand)
- 1/4 cup Lite 3 Cheese Blend Shredded
- 1 tsp Yellow Mustard (optional)
- 1 tbsp Diced Onion
- 3 slices Wickles Pickles (use any kind, dill is 0 points)
- 2 Marzano Tomatoes (use any kind)
- 1/2 tsp Dak's Steakhouse Seasoning (optional)
- 1 tbsp No Sugar Ketchup (optional)
Instructions
- Combine in your fry pan, ground beef, onion, bacon pieces, mustard and seasoning then fry up
- While your meat mixture is cooking, whisk eggs and cook in non-stick fry pan on medium
- Dice up your tomatoes and pickles
- Once your eggs are no longer runny, add meat mix, most of your shredded cheese, tomatoes and pickles then fold over.
- Add the remaining shredded cheese and cover to melt
- Once cheese has melted, transfer to your plate and top with ketchup if you wish!
