Cheesy Taco Pasta Bowl

I love Taco Tuesday! I turned my usual beef taco crunchwrap into a pasta bowl and WOW it turned out amazing!

Al Dente sent me some of their pasta and it is the BEST out there! Low in points and carbs and high in protein and fiber! It’s so delicious that my husband even loves it!


Cheesy Taco Pasta Bowl

Let's TACO 'bout how amazing this looks! This big bowl of beef taco pasta is delicious and very filling. Why did I wait so long to try this.
To make this cheesy I used three different types of cheese and it was PERFECT!

Cook Time 25 minutes

Equipment

  • 1 Fry Pan
  • 1 Sauce Pan

Ingredients
  

  • 3/4 cup Al Dente Fusilli Pasts dry
  • 4-2/3 oz 96/4% Ground Beef
  • 2 servings Daks Taco Knight Seasoning
  • 2 Diced Campari Tomatoes
  • 1/4 cup Diced Onion
  • 2 tbsp Fresh Cilantro
  • 2 Mini Sweet Red Peppers
  • 2/3 cup Roasted Corn (I use either Trader Joes or Del Monte)
  • 3 tbsp Tostitos Salsa Con Queso
  • 1/3 cup Lite 3 Cheese Blend Shredded
  • 1 slice Velveeta Cheese
  • 2 tbsp Light Sour Cream

Instructions
 

  • Boil Pasta
  • Fry up your diced onions with ground beef and taco seasoning
  • Heat up your corn – using fry pan or microwave
  • When pasta is done, strain
  • Add in your cheeses to the pasta and stir together
  • Add the rest of your ingredients except for tomatoes and sour cream – stir
  • Put your pasta into a bowl and top with diced tomatoes and sour cream
