Chicken Bacon Ranch Pasta Salad

With the warm weather I have been enjoying making pasta salads. They are refreshing, filling and so delicious!
Chicken and Bacon for me is like peanut butter and jelly. They belong together! The yummy flavors in this big bowl right here are perfect and definitely a healthy treat.



Chicken Bacon Ranch Pasta Salad
Equipment
- 1 Air Fryer
- 1 Pasta Pan
Ingredients
- 1-1/4 cup Carba-Nada Pasta – dry
- 8 oz Chicken Breast
- 6 tbsp Bolthouse Farms Ranch Dressing
- 4 tbsp Bacon Pieces/Bits (I love Kirkland brand)
- 1-1/2 cups Romaine Lettuce
- 1 tbsp Shredded Fresh Parmesan (for topping)
- 1/4 cup Lite 3 Cheese Blend Shredded (you can use solid if you find light version)
- 2 tbsp Fresh Basil chopped
- 2 Roma Tomatoes
- 2 Mini Cucumber
Instructions
- Air Fry chicken at 400
- Boil your pasta
- Cut up your veggies and set aside
- Once pasta is done, transfer to a large mixing bowl to cool
- When chicken is done, cut into bite size pieces
- Add everything except for parmesan cheese to your mixing bowl, add ranch dressing and stir together
- Transfer your salad to a serving bowl and top with green onions and freshly grated parmesan cheese

Total Weight Watchers points for entire bowl which is 2 servings is 16 points.
