Chicken Taco Salad

I remember when I was a kid and my mom would make a ginormous bowl of taco salad for our family. She used a huge yellow mixing bowl and by huge I mean I could probably curl up in it. HA!
Now every time I make a taco salad, it reminds me of my mom and the joy it brings me gives me all the warm feelings.
Usually I use ground 96/4% beef but I had leftover shredded taco chicken from quesadillas I made the night before. No matter the meat you use on this, it is DELISH! Add all the veggies you want and whatever salsa dressing you wish. My favorite is one I make by my friend Food By the Gram. This is called “Healthy Buffalo Ranch”. It has changed my life and it will change yours I promise!


Chicken Taco Salad
Ingredients
- 5 Oz Shredded Chicken Breast
- 1 Tbsp Taco Seasoning
- 1/3 Cup Black Beans
- 1/2 Cup Diced Tomatoes
- 3 Cups Romaine Lettuce
- 1/4 Cup Lite Shredded Cheese
- 1/3 Cup Diced White Onion
- 15 Good Thins Corn Crackers
- 1/3 Cup Roasted Corn
- 1/4 Cup Healthy Buffalo Ranch
Instructions
- Mix chicken with taco seasoning and heat up for 45 seconds in microwave.
- Chop up your lettuce, tomato and onion.
- Drain corn and black beans.
- Add everything to your bowl and eat!
