Spiced Yogurt Chicken and Street Corn
I love street corn! Heck I could just eat a big bowl of corn as a meal. It’s always been one of my favorites growing up. Then make it as street corn or as come call it elote corn and you take it to a whole new level.
The spice yogurt marinade I made for the chicken is INCREDIBLE! You can marinate anywhere from 30 minutes to up to 8 hours. I did 4 hours and it was DELISH!
Spiced Yogurt Chicken and Street Corn
This chicken was amazing! It came out super tender and juicy on the inside with a slight crisp on the outside from cooking them in the air fryer. I made a delicious mild spiced yogurt mixture, scored the chicken and marinated for 4 hours. SO GOOD!!
Equipment
- 1 Air Fryer
- 2 Large Mixing Bowl
- 1 Large Cookie Sheet
- 1 Rice/Pressure Cooker
- 4 Lunch Containers
Ingredients
- 2-2/3 cup RIce
Spiced Yogurt Chicken
- 4 large Chicken Breasts
- 1 cup 0% Plain Greek Yogurt
- 1 tbsp Extra Virgin Olive Oil
- 1-1/2 tbsp Minced Garlic
- 2 tsp Ground Cumin
- 4 tbsp Lemon Juice
- 2 tsp Paprika
- 2 tsp Cayenne Pepper
- 2 tsp Ground Coriander
- 2 tsp Garlic Salt
- 1 tsp Red Pepper Flakes
- 3 tbsp Fresh Cilantro
Street Corn
- 4 cups Corn (I used canned roasted corn)
- 1/8 cup Light Mayo
- 1/2 cup 0% Plain Greek Yogurt
- 1/2 tbsp Lime Juice
- 4 tbsp Fresh Cilantro
- 1/3 cup Diced Red Onion
- 1 tsp Paprika
- 1/2 tsp Chili Powder
- 2 tsp Diced Jalapeno (optional)
- 1/2 oz Cotija Cheese
Instructions
- Pat dry your chicken breasts and score to make slits both ways diagonal.
- Mix your spicy yogurt ingredients in a large mixing bowl
- Add your chicken to your bowl and mix in with your yogurt mixture until all parts of the chicken is covered. You can also put the mix and chicken in a large ziploc.
- Cover your big bowl and place into the fridge. Marinate for 30 minutes to 8 hours.
- At this time, you can start dicing up your veggies for street corn and set aside.
- Once you are ready to start cooking your chicken, set your air fryer to 400.
- Place your chicken in to the air fryer two at a time and cook for 15 minutes. Time varys depending on your fryer. Flip half way or when your fryer beeps at you like mine does.
- Measure out your rice according to what appliance you are using and start cooking.
- In a large mixing bowl, make your street corn and set aside.
- Once your chicken is cooked, take it out and place on a cookie sheet while the next 3 cook.
- When your rice is done, assemble your bowls!
- Slice your chicken breast any way you wish and add to your bowls.
- I will heat these up at work for 2 minutes, stir and heat another 45 seconds. I like to add light sour cream to mine when I eat it! ENJOY!
