Creamy Cheesy Cajun Chicken Pasta

WOW WOW WOW! If you love spicy like I do then this pasta dish is for YOU! You can put in less spice too and it will still be DELISH!

I am obsessed with the Al Dente pasta as it is lower calorie, carb and points! And who doesn’t love cheesy and creamy together???


Creamy Cheesy Cajun Chicken Pasta

I cannot begin to tell you just how amazing this turned out!! If you like creamy, cheesy and spicy then you will love this.

Equipment

  • 1 Air Fryer
  • 1 Sauce Pan
  • 1 Blender/Ninja
  • 1 Large Fry Pan

Ingredients
  

  • 1 cup Al Dente Carba-Nada Fusili Pasta
  • 6 oz Tyson Blackened Chicken
  • 1 tsp Cajun Seasoning (I used 1/2 Papas Pepper Extreme and 1/2 cajun)
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1/4 cup Yellow Onion (chopped)
  • 1 Seedless Sweet Red Pepper
  • 1/3 cup Unsweetened Vanilla Almond Milk
  • 1/8 cup Fat Free Vegetable Stock
  • 2 Laughing Cow Light Swiss Cheese Wedges
  • 2 tbsp Reduced Fat Cream Cheese
  • 1 oz Lite Shredded Mozzarella (I love Trader Joes)
  • 1/8 cup Fresh Grated Parmesan Cheese

Instructions
 

  • Boil your pasta
  • Air fry chicken at 400 for 9 minutes
  • Chop up your onion and sweet red pepper then add to a saucepan and fry until softened on med/high
  • Add the rest of your ingredients to the blender and blend (leaving some grated parmesan aside for garnish)
  • Add your sauce to the pan and turn to medium
  • Drain your pasta and add to your sauce
  • Once your chicken is cooked, slice up into bite size pieces
  • Add everything to your bowl and top with parmesan cheese and parsley

    Flavor is really good but I’m not sure why my sauce is soupy. It is not thick at all and looks nothing like the picture. Followed the directions…what did I do wrong?

    1. OH NO! I am so sorry! I didn’t calculate the almond milk and stock correctly. I have just updated that! Again, apologize for my mistake on that.
