General Tso’s Chicken and Rice Bowls

This is my all time favorite dish to order takeout! This version is only 3 points vs up to 20 points at a restaurant! I went non-breaded because I prefer it for my meal prep. You can go for breaded using a combo of cornstarch and flour or crushed corn flakes. This sauce is so delicious that you won’t even miss the breading!
I topped this with white sesame seeds, additional chili pepper flakes and green onions. If you are not a fan of spicy, you can leave out the pepper flakes. The sauce will still be DELISH!





General Tso’s Chicken and Rice Bowls
Equipment
- 1 Air Fryer
- 1 Oven Stove Top
- 1 Rice/Pressure Cooker
- 2 Sauce Pans
- 2 Large Mixing Bowls
- 4 Glass Lunch Storage Container
Ingredients
- 1-1/2 lbs Chicken Breast (diced into bite size pieces)
- 1/2 tbsp Onion Powder
- 1/2 tbsp Garlic Powder
- 2 tsp Ground Ginger
- 4 cups White Rice
- 1 tbsp Green Onions- diced
- 1 tsp White Sesame Seeds
- 2 tsp Crushed Red Pepper Flakes (optional)
General Tso's Sauce
- 1-1/2 tbsp Hoisin Sauce
- 3 tbsp Seasoned Rice Vinegar
- 3 tbsp Swerve Granulated Sugar
- 1 tbsp Swerve Brown Sugar
- 1 tbsp Wholesome Yum Keto Honey
- 5 tbsp Reduced Sodium Tamari
- 1/2 cup Water
- 1 tbsp Corn Starch (mixed with a little water)
- 2 tsp Crushed Red Pepper
Instructions
- Set air fryer to 400
- Mix your chicken bites with your garlic powder, onion powder and ground ginger
- At this point, start your rice (chicken will take about 30 minutes so this step will depend on how you are cooking your rice)
- Air fry half of your chicken for 15 minutes; mixing and moving the pieces around half way through. When done, add to a clean mixing bowl
- Repeat the above chicken step
- Add your sauce ingredients to a pan and bring to a boil then quickly down to a simmer
- When your rice and chicken is almost done, boil/steam your broccoli
- Pour your sauce over your chicken (leaving a little for a drizzle at the end) and mix
- Add all the goodies to your lunch containers evenly and top with the remaining sauce drizzle, sesame seeds, pepper flakes and green onion
