Chicken Sausage and Potato Bowls

These turned out so delicious and super easy! I probably say that about all my meals but who wants to spend half the weekend in the kitchen meal prepping?! Not me.

I love this chicken sausage and when I saw it return to Costco I had to grab a few packages! I found these cute and colorful rainbow fingerling potatoes and Trader Joes so thought I would just cook those up along with. It is a great combination! Adding the apples brings this dish to the next level with sweetness! Trust me on this one!


Chicken Sausage and Potato Bowls

These look delicious and wow do they smell amazing! I'm excited for my lunches at work this week. Heck, I know I always say that every week. HA!

Cook Time 30 minutes
Servings 1

Equipment

  • 1 Oven
  • 1 Air Fryer

Ingredients
  

  • 3 AmyLu Chicken Sausage Links (or 7 oz)
  • 1 cup Rainbow Fingerling Potatoes – rinsed/washed
  • 1 Medium Apple (any kind) – rinsed/washed
  • 1/3 cup Diced Onion
  • 1 Serving Daks Green Zest

Instructions
 

  • Preheat oven to 400
  • Cut up your sausage, potatoes and apples
  • Lay out your sausage onto a cookie sheet
  • Set air fryer to 400
  • Drizzle EVOO and seasoning of your choice on potatoes and stir to coat
  • Put your chicken sausage in oven once preheated for 15 minutes (I cooked mine too long at 20 so check at 15)
  • Put your potatoes in the air fryer once ready for 20 minutes
  • While your chicken and potatoes cook, caramelize your onions in a small fry pan. I fry them on a high heat, once start to brown add a little bit of water, stir and repeat that process until it is all golden brown.
  • Put your apples onto a cookie sheet
  • Once sausage is done, take out of oven and add your apples for 5 minutes
  • At this time, everything should be done and ready to fill your bowls!
  • Top with Thyme, Poultry Seasoning and Parsley. (all optional)
