Firecracker Turkey & Rice Bowls

I love sweet and spicy foods and when you can turn them into a healthy version it is even better! These delicious ground turkey and rice bowls are super filling and ONLY 6 weight watchers points! Can you even believe that?!

You can add veggies of your choice to these but I kept them with just the turkey and rice. All credit goes to Lite Cravings for this recipe which I will be forever grateful!!


Firecracker Turkey & Rice Bowls

This recipe is from Lite Cravings but I wanted to include it here because it’s THAT good!
This is probably one of the easiest meal prep's I have done AND one of the most delicious. Whenever I reheat these at work, you can hear people in the office asking what smells so good. Yep…it's ME!

Equipment

  • 1 Big Fry Pan
  • 1 Pressure Cooker/Rice Cooker
  • 1 Sauce Pan
  • 4 Glass Storage Containers
  • 4 Plastic Condiment Containers

Ingredients
  

  • 32 oz 99% FF Ground Turkey
  • 4 cups White Rice
  • 1 Bunch chopped Green Onions
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Ground Ginger

Firecracker Sauce

  • 1/2 cup Unsweetened Applesauce
  • 1/3 cup Franks Red Hot Buffalo Sauce
  • 1/4 cup Swerve Brown Sugar
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Red Pepper Flakes
  • 1 tsp Cornstarch

Instructions
 

  • Put your rice into your pressure cooker or rice cooker.
  • Mix your ground turkey forming little pieces.
  • Place your turkey into a sprayed fry pan and add the garlic powder and ginger powder.
  • Stir frequently to get it all seasoned and cooked so there is no pink.
  • In your sauce pan, mix the firecracker sauce ingredients.
  • Pour some of your sauce into the condiment containers.
  • Once your turkey is no longer pink, add half of your green onions
  • Pour the sauce into the fry pan with the meat and mix.
  • Once your rice is done, measure out into your bowls
  • Weigh out your turkey into 8oz for each bowl.
  • Top with green onions and white/black sesame seeds
