Jalapeño Popper Chicken and Pasta

One of the best and my favorite appetizers or snacks is the jalapeño popper! Even better are the ones wrapped in bacon!! So why not turn a bacon wrapped jalapeño popper into a low point/calorie chicken casserole?

I am so excited for my meal prep this week! These turned out incredibly delicious and only 10 points!


Jalapeño Popper Chicken and Pasta

OMG if you love bacon wrapped jalapeño poppers then THIS you must try! You can make it as spicy or not spicy as you want.
This is mild as I used mostly pickled jalapeños and soooo delish!

Equipment

  • 1 Air Fryer
  • 1 Large Sauce Pan
  • 1 Large deep Fry Pan
  • 2 Large Mixing Bowls

Ingredients
  

  • 4 Chicken Breasts
  • 12 oz Al Dente Carba-Nada Fusilli Pasta – Dry
  • 2 tbsp All-Purpose Flour
  • 1-2/3 cup Simple Truth Organic Chicken Broth
  • 2-1/2 cups Unsweetened Plain Almond Milk
  • 1 medium Onion – diced
  • 4 tsp Minced Garlic
  • 1 tbsp Light Butter Spread (I use I cant Believe its Not Butter)
  • 1/2 tbsp Garlic Powder
  • 1/2 tbsp Onion Powder
  • 1/4 tsp Salt
  • 1 tsp Black Pepper
  • 8 oz Fat Free Cream Cheese
  • 3/4 cup Light Shredded 3 Cheese Blend (Trader Joes)
  • 7 oz La Costena Pickled Jalapeños
  • 2 small Jalapeño Peppers – diced

Instructions
 

  • Cut up your chicken breast into bite size pieces
  • Season with onion powder, garlic powder, salt and pepper. Mix well and set aside
  • Preheat air fryer at 400
  • Cut up your onion and jalapeños (leave some slices if you want to use to top)
  • When your air fryer is preheated, add half of your chicken breast pieces and cook for 18 minutes, flipping half way
  • Start boiling your pasta
  • When your first batch of chicken is done, pour into clean bowl and cook your second batch
  • In your fry pan add your butter, onion and garlic and cook for a couple minutes
  • Add in your flour and stir, cook another minute
  • Slowly mix in your broth and milk to the fry pan
  • Once your sauce is getting a little thicker, add cream cheese to melt
  • At this point your chicken should be done so add to the rest of your cooked chicken
  • Add to your fry pan the jalapeños and bacon
  • Drain your cooked pasta then add back into the same pan you boiled it in
  • Pour some of your sauce in with your chicken and mix that
  • Set your fry pan back onto the stove and add your cheese then mix until melted and creamy
  • Pour sauce mixture into your pasta and mix
  • Start assembling your bowls by adding your pasta then your chicken
  • Top with bacon pieces, fresh jalapeños for color and your sliced jalapeños
