Air Fryer Honey Mustard Chicken Meal Prep Bowls (WW Friendly + Fall Comfort)
Equipment
- 1 Air Fryer
- 1 Oven/Stove
- 1 Small Sauce Pan
- 2 Large Mixing Bowls
- 1 Microwave (for my rice)
- 4 Meal Prep Glass Containers
Ingredients
- 1-1/2 lbs Chicken Breast (cut into bite size pieces)
- 2 cups Jasmine Rice
- 2 cups Brussel Sprouts
- 2 cups Shredded Colorful Cabbage
Chicken Marinade
- 1/2 cup 0% Plain Greek Yogurt
- 1 tbsp Dijon Mustard
- 1 tbsp Lemon Juice
- 1 tsp Smoked Paprika
Honey Mustard Glaze
- 3 tbsp Honey (Wholesome Yum Keto)
- 3 tbsp Dijon Mustard
- 1-1/2 tbsp Apple Cider Vinegar
- 1 tbsp Swerve Brown Sugar Alternative
Instructions
- Whisk the marinade and mix well with your chicken pieces then refrigerate for 30-overnight.
- Preheat your oven at 400 degrees.
- Cut up your fresh brussel sprouts, spray with olive oil, season with salt & pepper then roast for 25 minutes.
- Air fry your chicken at 400 for 25 minutes, flipping the pieces half way. The timing on these will depend on your air fryer!
- Microwave your rice and set aside. I used Trader Joe's jasmine rice for this meal prep.
- Whisk your glaze in a small sauce pan, bringing to a quick boil then turning down to medium. Continue to whisk until it starts to thicken slightly. Then turn to low.
- Assemble your bowls with the slaw, then brussel sprouts on top of that the the rice.
- Mix your sauce with the chicken until all the pieces are coated.
- Add your chicken to the bowls and add whatever garnish you wish! ENJOY!
