Raspberry Chipotle Chicken Meatballs

I love meatballs, whether they are made with beef, turkey or chicken! These are delicious and only 6 points! I used 96/4% so there is a little point value in it but for me it is worth it!

This sauce is delicious with the perfect balance of sweet and spicy. I used frozen raspberries but you can use fresh too. They both warm up nicely in the sauce.


Raspberry Chipotle Chicken Meatballs

This turned out delicious and super easy. I love a sweet and slightly spicy kick. This is also really good with beef meatballs, just stick with 96/4% to keep it lower in points!

Equipment

  • 1 Air Fryer
  • 1 Microwave
  • 1 Small Blender (for corn flakes)

Ingredients
  

  • 1 cup White Rice

Chicken Meatballs

  • 7 oz Isernios 96/4% Ground Chicken
  • 1/2 tsp Extra Virgin Olive Oil
  • 1/8 tsp Onion Powder
  • 1/8 tsp Garlic Powder
  • 1/8 cup Corn Flakes (blended) or Panko Crumbs

Raspberry Chipotle Sauce

  • 2 cups Raspberries
  • 1/2 tsp Apple Cider Vinegar
  • 1 tsp Adobo Sauce (your choice if you want to add the chilis too)
  • 1/2 Serrano Pepper (otional)
  • 1/2 tsp Garlic Powder
  • 1/2 tbsp Swerve Granulated Sugar
  • 1/4 cup Wholesome Yum Honey (Honey Alternative)
  • 1/4 cup Lite Soy Sauce
  • 1/8 cup Swerve Brown Sugar

Instructions
 

  • Mix your chicken meatball ingredients.
  • Make small meatballs, up to you on size. I made mine on the smaller side.
  • Air Fry at 400 for 10 minutes. This may only take 8 minutes depending on your air fryer so keep an eye on it.
  • Mix your sauce ingredients in a sauce pan on warm.
  • Heat up your rice and once done, put into a bowl.
  • When your meatballs are cooked, put in with your sauce.
  • Put your meatballs over your rice and top with green onions and sesame seeds (optional).

Notes

Total of 8 Weight Watchers points for meatballs and sauce.
Total of 6 points for 1 cup white rice.
