Chicken Quesadillas

There doesn’t appear to be much difference between my quesadillas and crunchwraps except for the amount of filling I use. I should use less like the standard type of quesadilla which is usually flat but why should I deprive myself of all the delicious goodness that I can stick in these bad boys??

I enjoy these with a side of sour cream but feel free to use guacamole and/or salsa. It is up to you and your taste buds. Enjoy food, enjoy life!


Chicken Quesadillas

In QUES you didn’t know, I ♥️ to eat!! 🤣 You can make delicious food with less calories and low ww points. 
I used up some leftover shredded taco chicken we had so I made these quesadillas and WOW were these incredible‼️ I have made these with canned shredded chicken too which also turns out amazing!

Equipment

  • 1 Fry Pan

Ingredients
  

  • 2 Cut da Carb Flatbread
  • 1/2 Cup Lite 3 Cheese Blend Shredded Cheese
  • 2 Tbsp Taco Seasoning
  • 1/2 Cup Diced Onion
  • 2 Small Mini Sweet Red Pepper
  • 2 Tbsp Chopped Cilantro
  • 1 Cup Shredded Chicken Breast

Instructions
 

  • Caramelize Onions in your fry pan.
  • Mix shredded chicken with taco seasoning.
  • Take each flatbread pile the following in the middle: starting with shredded cheese, then the chicken, onions, red pepper, cilantro then more cheese. 
  • Fold up like a present.
  • Over your fry pan hold your folded quesadilla and spray the folded side with butter spray and place into pan.
  • Fry up until golden brown, just takes a minute but check to be sure.
  • Spray the top side that you haven’t sprayed yet and flip the quesadilla. You can then spray the sides if you wish and flip by holding the sides with a could spatulas.
  • Remove from pan and cut in half. Serve with a side of light sour cream and/or guacamole.
