Spicy Shrimp Tacos with Watermelon Mint Pico
Equipment
- 1 Fry Pan
- 1 Small Pyrex Bowl for making circle tortillas
- 2 Small Mixing Bowl for Pico & Sauce
- 1 Cutting Board
- 1 Sharp Knife
- Measuring Cups
- Measuring Spoons
Ingredients
- 2 CutdaCarb Flatbread
- 1 lb Shrimp; peeled and rinsed
Shrimp Seasoning
- 1 tsp Paprika
- 1/2 tsp Chili Powder
- 1/4 tsp Cayenne Pepper
- Salt & Pepper to taste
Paprika-Lime Greek Yogurt Sauce
- 1/2 cup Nonfat Plain Greek Yogurt
- Juice of 1 Lime
- 1/2 tsp Paprika
- Pinch of Chili Powder
Watermelon Pico
- 1 cup Diced Watermelon
- 1/4 cup Finely diced red onion
- 1 small Jalapeno – finely chopped
- 2 tbsp Fresh Mint – chopped
- Juice of 1 Lime
- Pinch of Salt
Instructions
- Whisk your sauce ingredients and set aside
- Chop/Dice your pico ingredients, mix together well and set aside
- Cut your circles out of the flatbread. You should get two out of each flatbread.
- Either use a kitchen torch or quick fry in a pan the tortillas to get them slightly charred. This is optional!
- Peel and rinse your shrimp and pat dry
- Add your shrimp to a fry pan and season; frying until fully cooked
- Layer your tacos starting with your sauce, pico and your shrimp.
- ENJOY!
