BBQ Chicken and Sweet Potato Bowl

I love sweet potatoes and the ways you can make them are endless! I fine the easiest way to cook them is in the air fryer which is what I did here. Just cut them up, drizzle with EVOO and away you go!

Sweet potatoes are packed with essential nutrients and contain antioxidants that have anti-inflammatory properties. There are many reasons to eat these potatoes but why not just eat them because they are delicious??!!


BBQ Chicken and Sweet Potato Bowl

You all know how much I love making easy delicious bowls. This one turned out SO good and super easy!
The air fryer is my best friend and you can cook anything in it! Don't judge with this one…I took my eyes off my caramelized onions so they cooked a bit longer than usual but were still amazing.
The entire bowl is only 8 points!

Equipment

  • 1 Air Fryer
  • 1 Microwave
  • 1 Stove Top

Ingredients
  

  • 1 large Sweet Potato
  • 7 oz Chicken Breast
  • 1 cup Corn
  • 5/8 cup Diced Onion
  • 2 servings Dak's BBQ Seasoning (any kind will do)

Light BBQ Sauce

  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Franks Buffalo Wing Sauce
  • 1-1/2 tbsp Worcestershire Sauce
  • 4 tbsp Sugar Free Ketchup

Instructions
 

  • Set air fryer to 400 for 20 minutes
  • Dice up BOTH your chicken breast and sweet potato into bite size pieces
  • Add BOTH your chicken and potato to fryer and spray with Avocado Spray or drizzle EVOO then season with BBQ seasoning
  • When air fryer beeps half way, use a utensil of choice to move the food around a bit without mixing the two together then add more spray and seasoning
  • When all is done, be sure to check the temp of your chicken to be sure it is cooked to 165 since air fryers are all different
  • While your chicken and potato are cooking, caramelize your chopped onions in a small fry pan. I fry them on a high heat, once start to brown add a little bit of water, stir and repeat that process until it is all golden brown.
  • In a medium sauce pan, heat up your bbq sauce ingredients on high until boils then turn down to low/med
  • Once your chicken is fully cooked, add to your bbq sauce and stir
  • Assemble your bowl and ENJOY!
