Chicken and Street Corn Tacos
Tacos are one of my favorite meals! There are so many ways you can make them, from different tortillas, proteins, veggies and even fruit.
This combo is one of my favorites and how beautiful is this??? I could eat street corn by itself out of a bowl so really add anything to it and I am in heaven.
Chicken and Street Corn Tacos
Let's TACO 'bout how amazing these tacos are! I am celebrating Taco Tuesday with these beauties and WOW these are the best way to celebrate!I love making all sorts of tacos using tons of different protein and veggies….even fruit!
Equipment
- 1 Air Fryer
- 1 Fry Pan
- 1 Microwave
Ingredients
- 1-1/2 Cut da Carb Flatbread
- 1 cup Roasted Corn
- 9 oz Diced Chicken Breast
- 1/3 cup Diced Red Onion
- 2 tbsp Chopped Cilantro
- 2 tbsp Light Sour Cream
- 1/3 oz Cotija Cheese
- 1 Lime
Instructions
- Air fry your chicken (I used diced frozen) at 400 for 10 minutes
- While your chicken cooks, cut out 3 rounds from your flatbread using a round bowl/dish
- Pan fry your corn to heat up (I use Trader Joes frozen roasted corn) or microwave to warm up
- Chop up your red onion and cilantro
- When your chicken is cooked, cut into bite size pieces
- Lay your flatbread in your bowl/plate and layer with all your goodies!
- Squeeze half you lime all over then use the other half for more squeezes as you eat.
