Loaded Taco Fries

If you can believe it, these are RUTABAGA fries! They have been a huge game changer for me in my weight loss journey. They’re a root vegetable with zero carbs and zero points!

People ask me all the time whether it is the same as a turnip. They are close but not the exact same. Rutabaga’s are generally larger than turnips. Usually, the rutabaga are brownish-yellow and turnips are smaller white and purple. Rutabaga’s are slightly sweeter and turnips have more of a radish flavor. They are BOTH delicious, but I always go for the rutabaga!

HOLY RUTABAGAS! This is always a delicious bowl! Full of flavors and lots of food for a small amount of points!
Rutabaga fries are so easy and a great alternative to potatoes if you are looking for less points, carbs and/or points! They are a root vegetable and how cute are they as fries?! They really do look the same.
Prep Time 15 minutes
Cook Time 30 minutes
Servings 1

Equipment

  • 1 Air Fryer
  • 1 Fry Pan
  • 1 Serving Bowl

Ingredients
  

  • 2 Large Rutabaga
  • 5 oz 96/4% Ground Beef
  • 4 tsp Taco Seasoning
  • 4 tbsp Medium Salsa Con Queso (I use Tostitos)
  • 2 tbsp Light Sour Cream
  • 3 tbsp Guacamole
  • 2 tbsp Chopped Green Onions
  • 2 tbsp Chopped White or Yellow Onion
  • 1/8 cup Diced Tomatoes
  • 2 tbsp Sliced Black Olives

Instructions
 

  • Peel and cut the rutbagas into fry shape
  • Drizzle with EVOO and sprinkle taco seasoning, then mix
  • Air fry at 400 for 25 minutes, shaking several times throughout
  • Fry up the ground beef seasoned with taco seasoning
  • Chop up your veggies
  • Once your rutbaga fries are done, put into your serving bowl
  • drizzle the queso and add the ground beef then veggies
  • Top with guacamole and sour cream
