Reuben Crunchwrap

Are you a reuben fan? I have never actually eaten one. Call me crazy but I have never been a fan of sauerkraut so I’ve never tried to eat one of these sandwiches.

I actually really enjoyed this! Plus my new lightened up Thousand Island Dressing is delicious and added the perfect flavor to this.

As a kid growing up, I would always order the “pink” sauce at restaurants. Whether it was on my salad or my burger, it has always been my favorite dressing.


Reuben Crunchwrap

This turned out VERY delicious! If you are a fan of reuben's then you will love this. I know…I know…this is not rye bread so it isn't really a reuben. Well, you are right BUT with everything else that is included in a reuben, it is close enough. Plus it is with less WW points and calories!
The gooey cheese, saltiness of the sauerkraut and pastrami then the crunch on the outer of this sandwich…it is AMAZING!!
PLUS my new lightened up Thousand Island Dressing is DELISH!!

Equipment

  • 1 Fry Pan
  • 1 Strainer

Ingredients
  

  • 1 Cut da Carb Flatbread
  • 2 Light Swiss Cheese Slices (I use Jarlsberg)
  • 2 tbsp Sauerkraut
  • 2 oz Turkey Pastrami
  • 2 tbsp Diana's Thousand Island Dressing
  • 1 ICBINB Light Butter Spread

Instructions
 

  • Drain and squeeze press your sauerkraut
  • Assemble your flatbread with your ingredients in the middle starting and ending with your cheese.
  • Fold up (watch my Instagram story video highlight)
  • Spray folded side with butter spray
  • Place in your fry pan on med/high heat and cover
  • Give it a few minutes to brown on the bottom, spray the top of your crunchwrap with butter then flip
  • Spray all the edges and use your butter spray bottle and spatula to hold each side of your crunchwrap as you slowly turn it to brown every side.
  • Once done, transfer to a cutting board and cut in half.
