- 1 Small Sauce Pan
- 4 Lunch Meal Prep Containers
Ingredients
- 4 large Chicken Breasts
- 2 tsp OSMO Chicken Gourmet Blend
- 1/2 tsp Smoked Paprika
- 1 cup Jasmine Rice
- 2 cups Colorful Cabbage
- 1 cup Pineapple Tidbits
Honey Pineapple Sweet Chili Sauce
- 2 tbsp Honey (I use Wholesome Yum Keto)
- 1/2 cup GHughes Sweet Chili Sauce
- 1/4 cup Pineapple Juice
- 1 tsp Soy Sauce – low sodium
- Squeeze of 1/2 lime
Instructions
- Pat dry your chicken, season then air fry at 400 for 25 minutes. Flipping half way through and cooked to 165. Be sure to cook in a single layer
- Cook your rice. Whether it is in a rice cooker, pressure cooker or microwave.
- When your chicken is cooked, set onto a cutting board and let cool before slicing. This will help!
- Whisk your sauce ingredients and set aside.
- Assemble your bowls with coleslaw on half of your bowl then the rice on the other half then add pineapple to your slaw.
- Slice your cooled down chicken and add to your bowls.
- Drizzle your sauce over your chicken! If you prefer, cut your chicken into bite size pieces!
