Why You’ll Love This Recipe

These meal prep bowls are quick, easy, and made with convenient ingredients that come together in under 30 minutes. Using Chicken Breast Strips keeps prep time to a minimum while still delivering plenty of flavor. The G Hughes Sugar Free Mango Habanero Sauce creates a delicious glaze without adding lots of sugar, making this recipe a great option for anyone following WeightWatchers or simply looking for a lighter meal.

The Perfect Balance of Sweet and Heat

The combination of mango habanero sauce, savory soy sauce, and juicy pineapple creates the perfect balance of sweet, spicy, and tangy flavors. The shredded tri-color cabbage adds a crisp, fresh crunch that complements the tender chicken and fluffy basmati rice. Every bite has just the right amount of texture and flavor, making these bowls one you’ll look forward to all week long.

Great for Busy Weeknights

Meal prep doesn’t have to mean eating the same boring lunch every day. These chicken bowls reheat beautifully and stay fresh for several days, making them ideal for lunches or quick dinners. Store the pineapple cabbage slaw separately if you prefer an extra crisp texture, then assemble everything when you’re ready to enjoy.

Variations

These bowls are easy to customize with your favorite ingredients. Swap the basmati rice for brown rice, cauliflower rice, or jasmine rice. Add steamed broccoli, edamame, snap peas, or bell peppers for extra vegetables, or top with avocado for additional creaminess. You can even use grilled chicken, shrimp, or pork instead of the rotisserie chicken strips.
