A cozy, protein-packed fall breakfast that tastes like apple crumble pie!

I love fall, and one of my favorite things about this time of year is all the delicious apples. Living in Washington State means I’m lucky enough to have incredible local apples all around me, and they are absolutely perfect for this recipe.

These Apple Crumble Pie Protein Blended Baked Oats combine warm cinnamon-spiced apples, creamy blended oats and a golden oat crumble topping for a breakfast that feels like a treat but is perfect for meal prep.

And because they’re baked in individual ramekins, you get four perfectly portioned breakfasts ready to enjoy throughout the week.

A Cozy Fall Breakfast

If you love apple pie, apple crisp or anything with warm cinnamon and baked apples, this recipe is for you.

The oat batter is blended until smooth and creamy, then layered with warm skillet apples and finished with a simple oat crumble before baking.

The result is soft, tender baked oats with sweet apple pieces throughout and a delicious crumble topping.

It’s basically apple pie for breakfast!

Why You’ll Love These Baked Oats

These aren’t your typical bowl of oatmeal.

Blending the oats creates a soft, cake-like texture, while the warm apples and cinnamon bring all those classic fall flavors I love.

They’re also easy to portion, easy to meal prep and packed with protein and fiber to make breakfast more satisfying.

Fresh Washington Apples

One of my favorite things about living in Washington is having access to so many amazing apples.

When fall arrives, I can’t resist using them in my recipes. Fresh local apples are sweet, crisp and absolutely delicious, and they really shine in this recipe.

I cook the diced apples briefly in a skillet with cinnamon before adding them to the baked oats. This softens them while keeping a little texture, so you get delicious bites of warm apple in every serving.

The Apple Crumble Topping

The crumble topping is what takes these from baked oats to apple-crumble-inspired breakfast.

A simple oat crumble bakes on top until lightly golden, adding a little texture and sweetness to the soft baked oats underneath.

If you love pecans, you can add them to the crumble for even more crunch and a delicious nutty flavor.
