Chicken BLT Pasta Salad

This is a delicious and refreshing pasta salad that you can make for 1 or make for a get together with friends and family.

I love mixing pasta, salad and dressing together. Just add your favorite protein and veggies and you are good to go! Easy, delicious and low in points!


Chicken BLT Pasta Salad

This turned out DELISH! As you know, I love chicken and bacon combo. I made a delicious 1 point dressing for this and WOW YUM!
I am a huge fan of Al Dente pasta. They are super low in points and you wouldn't even know it. Their pasta tastes just like normal pasta!!

Equipment

  • 1 Pasta/Sauce Pan
  • 1 Air Fryer
  • 1 Fry Pan

Ingredients
  

  • 3/4 cup Al Dente Fusilli Pasta Dry
  • 1 cup Shredded/Chopped Lettuce
  • 5 oz Diced Chicken Breast
  • 2 slices Center Cut Bacon
  • 1/2 cup Grape Tomatoes
  • 3 tbsp Diced Red Onion
  • 2 oz Chopped Green Onions
  • 1 tbsp Fresh Grated Parmesan Cheese

Ranch Dressing

  • 1 tbsp Light Mayo
  • 1/4 cup 0% Plain Greek Yogurt
  • 1 tsp Dried Chives
  • 1/2 tsp Dill Weed
  • Dash Black Pepper
  • 1/8 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1 tbsp Parsley
  • 1 tbsp Lemon Juice

Instructions
 

  • Boil your pasta
  • Air Fry chicken at 400 for 9 minutes
  • Fry your bacon (I used leftover) you can also use bacon bits
  • Mix your dressing ingredients then put into the fridge
  • Chop up your lettuce, red onion and green onions and set aside
  • Once your chicken and bacon are cooked, cut into bite size pieces
  • Drain your cooked pasta and add everything to your bowl and mix with the dressing
  • Top with freshly grated parmesan
